all of the AMISH and most of EUROPE never pressure can. They ONLY WATER BATH CAN.

Canning is really fun, safe and easy if you follow the few simple rules. I used to do a ton of canning when I was keeping up with the vegetable garden a few years ago. Favorites were big, mixed jars of a dozen kinds of pickled peppers and bread and butter pickles made from those giant Armenian cucumbers all sliced up. The really fun part is being able to customize all of it to your liking once you learn the basics.
